What is life without a good chicken curry?
Here’s how you can make the ultimate go-to curry to accompany your roti, string hoppers, or rice!
Ingredients
Chicken 1 kg
Vinegar 1 Tbsp
Salt 1 ½ Tsp
Chilli Powder 3 Tsp
Curry Powder 1 Tbsp
Pepper 1 Tsp
Turmeric ½ Tsp
Ginger and Garlic 1Tbsp
Soy Sauce 1 Tbsp
Oil 1 ½ Tbsp
Onion 1 Small
Curry Leaves/ Rampe
Fenugreek Seeds ½ Tsp
Cinnamon 1 Inch
Cardamom 3
Clove 4
Green Chilli 2 Nos
Coconut Milk 2 Cups
Roasted Curry Powder
Method
1. Clean and cut the chicken
2. Add vinegar, salt, chilli powder, pepper, turmeric powder, ginger and garlic, soy sauce and mix well and marinate for 20 minutes
3. Heat oil in a skillet, add onion, curry leaves/rampe, fenugreek seeds, cinnamon, cardamom, clove and add marinated chicken and green chilli and cook for 10 minutes on medium heat.
4. Add coconut milk and cook for 20-25 minutes.
5. Finally add roasted curry powder.
