King Coconut Wine

Originally a part of Burgher tradition, Thambili Wine is now a common sight at Christmas and Easter gatherings as well as weddings. This week, Aunty D has blessed us with this recipe that will allow you to make it yourself in the comfort of your own home.

Prep time: 30 minutes

Leave aside for: Four weeks 

Ingredients

  • King coconut: 1 bottle (750 ML)
  • Sugar: 250g
  • Yeast: 5g
  • Clove:10
  • Cardamom: 5
  • Nutmeg (grated): 1 Tsp

Methods

  1. Extract the king coconut juice and pour into a jar.

2. Add yeast and sugar, ensuring that it is completely dissolved. Strain well and pour into a bottle.

3. Add clove, cardamom and grated nutmeg.

4. Place lid on the bottle (DO NOT TIGHTEN) and store in a cool dry place.

5. After two weeks, strain the mixture well and leave to ferment.

6. Strain again after one month.

7. After 12 weeks pour the wine into your fanciest glasses and enjoy!
