Pumpkin Kalu Pol Curry | Cooking with Aunty D

Try your hand at this delicious Pumpkin Kalu Pol Maluwa to accompany your lunch!

 

 

Ingredients: 

White raw rice 1 Tbsp

Grated coconut 3 Tbsp

Fenugreek Seed 1 Pinch

Cumin Seeds  1 Pinch

Mustard Seeds 1 Pinch

Chilli Powder (Roasted) 1 Tsp

Pumpkin 500g

Water to cover half the pumpkin

Salt 1 Tsp

Roasted Spices

Small Red Onions 4 Nos

Garlic 1 Clove

Curry Powder 1/2 Tsp

Turmeric Powder 1/4 Tsp

Pepper 1/4 Tsp

Water 1/4 cup

Roasted Chilli Powder 1 tsp

Curry Leaves

Pandan (Rampe)

Green Chilli 1

Ground Spices

Sera Real Coconut Milk  1 1/2 cup

 

Method:

  1. Clean and cut the pumpkin. Place in a pan and fill with enough water to cover half of the pumpkin. Add salt and boil.
  2. Roast white raw rice, grated coconut, cumin seeds, fenugreek seeds, mustard seeds. At the same time, roast roasted chilli powder until light brown in colour.
  3. Add onion, garlic, curry powder and turmeric to the roasted spices and blend until it forms a smooth paste.
  4. Add the ground spices to the cooked pumpkin and add roasted chilli powder, green chilli, curry leaves, pandan (rampe) and Sera Real Coconut Milk. Let it boil until it bubbles. Switch off flames.
